{"id":483,"date":"2011-03-10T10:44:21","date_gmt":"2011-03-10T17:44:21","guid":{"rendered":"http:\/\/karin.zmonkey.org\/?p=483"},"modified":"2011-03-10T10:44:21","modified_gmt":"2011-03-10T17:44:21","slug":"acorn-squash-soup","status":"publish","type":"post","link":"https:\/\/karin.zmonkey.org\/?p=483","title":{"rendered":"Acorn Squash Soup"},"content":{"rendered":"<p><a href=\"http:\/\/karin.zmonkey.org\/wp-content\/uploads\/2011\/03\/DSCF0352.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-487 alignleft\" title=\"Acorn Squash Soup\" src=\"http:\/\/karin.zmonkey.org\/wp-content\/uploads\/2011\/03\/DSCF0352-300x224.jpg\" alt=\"\" width=\"189\" height=\"141\" srcset=\"https:\/\/karin.zmonkey.org\/wp-content\/uploads\/2011\/03\/DSCF0352-300x224.jpg 300w, https:\/\/karin.zmonkey.org\/wp-content\/uploads\/2011\/03\/DSCF0352-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 189px) 100vw, 189px\" \/><\/a>I have had this huge acorn squash sitting on my counter, staring at me, for a few days now.\u00a0 So I decided to make some soup with it.\u00a0 There is a recipe, from a friends blog, that I&#8217;ve been wanting to try.\u00a0 So I sliced the acorn in half.\u00a0 I scooped out it&#8217;s guts and popped it in the oven to roast.\u00a0 It roasted for about an hour.\u00a0 I separated the flesh from the skin and discarded the skin.\u00a0 There was so much squash that I had to divide it (So I still have half a squash in my fridge).\u00a0 I took\u00a0 2 carrots, half an onion, and\u00a0 1\/2 inch ginger root and sauted them in a large sauce pan.\u00a0 Then I added 3 cups of chicken stock brought it up to a boil.\u00a0 Then I brought down the temp to a simmer.\u00a0 I simmered it for about 30 minutes and added the squash and simmered for another 30 minutes.\u00a0 I used a stick blender to blend it into a smooth texture.\u00a0 Then I add a 1\/2 cup of cream.<\/p>\n<p>I really enjoyed this soup.
