When you have children who want to eat it all the time pizza doesn&#8217;t sound so good anymore.\u00a0 This puts a healthy twist on the pizza.\u00a0 During the summer we like to grill this type of pizza and it is so yummy.\u00a0 Since it is still too cold to grill outside we made due with the oven.\u00a0 Instead of a tomato sauce we use a mixture of garlic and olive oil.\u00a0 then we layer a little mozzarella , chopped fresh spinach, and sliced tomatoes.\u00a0 We top all of that off with a little more cheese.\u00a0 Put it in a 500 degree oven and bake for about 8 &#8211; 10 minutes.\u00a0 We have to make a separate pizza for the kids (normal pepperoni and cheese), but Corey and I really enjoy eating this one.\u00a0 I need to make it clear that I didn&#8217;t use tomatoes mentioned in the previous post for this meal.\u00a0 I actually used the tomatoes from last week.\u00a0 Tomatoes are high in Vitamins A and C.\u00a0 They are also a good source of  potassium.\u00a0 Spinach is high in fiber, Vitamins A and C, iron, and folate.\u00a0 It is also a good source of magnesium.\u00a0 Your body needs iron for healthy blood and normal cell functioning.\u00a0 Magnesium is necessary for healthy bones.<a href=\"http:\/\/karin.zmonkey.org\/wp-content\/uploads\/2011\/03\/DSCF0320.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-479\" title=\"Pizza\" src=\"http:\/\/karin.zmonkey.org\/wp-content\/uploads\/2011\/03\/DSCF0320-300x224.jpg\" alt=\"\" width=\"230\" height=\"172\" srcset=\"https:\/\/karin.zmonkey.org\/wp-content\/uploads\/2011\/03\/DSCF0320-300x224.jpg 300w, https:\/\/karin.zmonkey.org\/wp-content\/uploads\/2011\/03\/DSCF0320-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 230px) 100vw, 230px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is one of my favorite things to do with spinach and tomatoes.\u00a0 I used to like pizza a lot.
