{"id":421,"date":"2011-03-03T12:45:40","date_gmt":"2011-03-03T19:45:40","guid":{"rendered":"http:\/\/karin.zmonkey.org\/?p=421"},"modified":"2011-03-03T12:45:40","modified_gmt":"2011-03-03T19:45:40","slug":"broccoli","status":"publish","type":"post","link":"https:\/\/karin.zmonkey.org\/?p=421","title":{"rendered":"Broccoli"},"content":{"rendered":"<p>We were given so much broccoli that I&#8217;ve been a little worried that I won&#8217;t be able to use it all.\u00a0 Monday night for dinner I decided to make broccoli and cheese soup for dinner.\u00a0 This is one of my favorite soups.\u00a0 I really love to make bread bowls and eat the soup out of that.\u00a0 My husband thought it would be better with some bread on the side.\u00a0 So that is what we ended up doing.\u00a0 I chopped and sauted about 1\/2 cup of onions and then added about 2 cups of broccoli.\u00a0 I added 3 cups of chicken stock (just enough to cover).\u00a0 I brought it all to a boil.\u00a0 I reduced the heat and let it simmer for about 30 minutes.\u00a0 I then took my stick blender and blended it until it was smooth.\u00a0 I added\u00a0 a 1\/2 cup of cream and 1\/2 cup of cheese.\u00a0 The soup had a really good flavor, but I was reminded why we don&#8217;t eat it very often.\u00a0 Preston and Sophia didn&#8217;t have any problems eating the soup.\u00a0 Levi, however, had to choke it down.\u00a0 He kept complaining about how he didn&#8217;t like it.\u00a0 I&#8217;m hoping with time that his opinion will change and we can at last enjoy this wonderful soup.\u00a0 I used about half of the broccoli that was in the basket.\u00a0 Since I boiled the broccoli it lost a lot of it&#8217;s nutritional value.\u00a0 You can steam, microwave, and stir fry broccoli with no effect on it&#8217;s nutritional benefits. Broccoli when prepared right is high in vitamin C and\u00a0 high in folate.
